Girls' Weekend Part 6 (Breakfast)

The Food:

A recap of our Girls' Weekend wouldn't be complete without a mention of all of the delicious food that we ate.  So without further ado, bring on the food!


Breakfast

Marci's Sunday Brunch Strata:

8 slices of whole wheat bread, cubed
3 cups sliced mushrooms
1 medium red onion chopped
1 Tbs olive oil
2 garlic cloves minced
8 eggs
8 egg whites
2 cups milk
1 package 10 oz frozen, chopped spinach (thawed and squeezed dry)
2/3 cup shredded Swiss cheese (be liberal with cheese)
1/2 cup shredded Cheddar cheese (be liberal with cheese)
1 Tbs Dijon mustard
1/2 tsp salt
1/4 tsp nutmeg
1/2 tsp pepper

Layer bread in 9x13 pan.  Saute mushrooms and onions, add garlic.  Cook 1 minute.  Combine mushroom mixture with the rest of the ingredients and layer over bread cubes.  Refrigerate over night.  Take out of refrigerator 30 minutes before baking.  Bake at 350 degrees for 50 to 60 minutes, until knife comes out clean.  Let rest 10 minutes before serving.

Girls nights/weekends with my friends are always all about the food! PS I love your header. It is so beautiful. You are so crafty and creative. But I'm not the least bit jealous.
