Girls' Weekend Part 6 (Dinner)

Dinner


Kari's Tortellini Soup:

2 Tbs olive oil
2 oz. Prosciutto (Italian Ham)
3 cloves garlic
1 medium onion, chopped
9 cups chicken broth
2 tsp dried Italian seasoning
10 1/2 oz. frozen tortellini (any kind)
2 14.5 oz. Italian style stewed tomatoes
8 oz. fresh spinach
salt & fresh ground pepper to taste
fresh, grated Parmesan cheese

Cut ham into small pieces. Heat oil over medium high heat. Add ham, garlic and onion. Cook until lightly browned. Add chicken broth and herbs. Boil. Stir in tortellini. Cook according to package directions, uncovered. Blend tomatoes in blender and stir into chicken broth mixture. Simmer 5 minutes. Add spinach and simmer until greens are wilted. Top with Parmesan cheese and serve.

 Great memories are always accompanied by great food. Right?
