Hey, Sweet Thing

This is my "go to " cookie recipe.  My mom gave it to me years ago and it has certainly served me well.

The $250 Chocolate Chip Cookie
I don't know who bought these cookies for $250 but I dare say, they are so good, whoever it was got their money's worth.

2 cups unsalted butter
2 cups sugar
2 cups light brown sugar
4 eggs
2 teaspoons vanilla extract
4 cups all purpose flour
5 cups oatmeal
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 7 ounce milk chocolate bar (grated)
24 ounces (4 cups) semi sweet chocolate chips
3 cups chopped walnuts or pecans

Preheat your oven to 375 degrees.  Measure the oatmeal and put it in your blender or food processor and puree it into a fine powder. 

Place softened butter and sugars in a very large mixing bowl.  Beat until creamy with an electric mixer set at medium low.  Add eggs and vanilla and contiue to beat until well combined. 

In a medium bowl, combine flour , powdered oatmeal, baking powder, soda and salt.  Add to the butter mixture.  Fold in the grated chocolate, chocolate chips and nuts.

Put the dough in the refrigerator and chill it for one hour.  (You can chill for an hour too, if you want.  Watch some TV, soak in the tub, surf the web, whatever.)

Spoon dough into 2 inch balls and place on an un-greased baking sheet.  Bake for 8 minutes on the middle rack.  Cool on a wire rack.  Makes about 8 dozen cookies.

I love this cookie recipe!  It is so versatile and no matter how I change it up they turn out chewy and delicious.  I have left the oatmeal un-pureed, I have used different kinds of chocolate chips and even mixed it up with butterscotch chips and I always use whatever nuts I happen to have on hand.
